Curing and Preserving Olives

Today I was given a large bucket of olives freshly picked. Although I googled "curing olives" there were so many listings and so many different instructions it was overwhelming. I wonder if anyone would have some information on this.

Vanilla Poppy Seed Cake

Ingredients

  • 1 tsp. vanilla
  • 1 yellow cake mix
  • 1 box vanilla instant pudding
  • 1/2 cup oil
  • 1/2 cup water
  • 1/2 cup pineapple or orange juice
  • 5 eggs
  • 1/4 cup poppy seed

Directions

In a mixing bowl, beat together all ingredients except the poppy seed for 5 minutes. Fold in poppy seed. Bake in angel food or bundt cake pan for 40-45 minutes at 350 degrees F. Note: To prepare pan, grease heartily and dust with cinnamon/sugar mixture instead of flour.

Avocado-Cilantro Bagel Spread

Ingredients

  • 1 ripe fresh avocado
  • 1 oz. goat cheese
  • 1/4 tsp. onion powder
  • 1-1/2 Tbps. chopped cilantro
  • 1/8 tsp. black pepper
  • dash of cayenne pepper
  • 1/8 tsp. salt
  • 1 Tbsp. fresh squeezed lime juice

Directions

Combine avocado with goat cheese and mix until well blended. Add remaining ingredients and mix well. Adjust salt to taste. Let stand for 1 hour at room temperature to let flavors blend. Serve with fresh bagels, toasted or not. Garnish with fresh lime slices and a spring of cilantro.

Main Dish

Ingredients

  • 2 lb. hamburger
  • 2 tsp. salt
  • pepper
  • 1 egg
  • 2 cups toasted bread crumbs
  • 1 Tbsp. minced parsley
  • 3 Tbsp. salad oil
  • 1/4 tsp. salt and pepper
  • 1 tsp. poultry seasoning
  • 1 small onion, minced
  • 1 can cream of mushroom soup
  • 1/2 can water

Directions

Combine first 4 ingredients. Form into 12 thin patties. Combine next 6 ingredients. Place dressing on 6 patties. Cover with other 6 patties. Seal edges. Brown patties and put in a casserole. Mix soup, water, and any leftover dressing. Pour over patties. Bake at 350 degrees F for 45 minutes.

Basil and Garlic Tortellini

Ingredients

  • 1 Tbsp. oil
  • 1 package (8 ozs) sliced mushrooms
  • 1 can (14-1/2 oz) diced tomatoes, undrained
  • 3 Tbsp. Basil and Garlic Seasoning blend
  • 1 package (8 Oz) cheese tortellini, cooked and drained
  • Grated Parmesan cheese (optional)

Directions

Heat oil in large skillet on medium-high heat. Add mushrooms; cook and stir 5 minutes. Stir in tomatoes and Seasoning Blend. Stirring frequently, bring to boil. Reduce heat to low; simmer 5 minutes. Serve over tortellini. Garnish with cheese, if desired.

Delicious Sour Cream Banana Pudding

Ingredients

  • 1 box vanilla wafers
  • 4-5 ripe bananas
  • 2 cups milk
  • 2 small boxes vanilla INSTANT pudding
  • 1 cup light sour cream
  • 8 oz. carton of cool whip (can use light)
  • 1/2 cup chopped pecans (optional)

Directions

Mix milk and instant pudding; add sour cream and two thirds of the cool whip (save the rest for topping). In a 13x9 inch size pan, put in layer of vanilla wafers, layer of bananas and cover with half of pudding mixture. Repeat and then put the rest of the cool whip over the top (will be a thin layer). Sprinkle with 1/2 c.chopped pecans over the top if desired. (This recipe is especially delicious if made the day before).

Tarragon Carrots

This recipe is easy and good. I've had people try it that wouldn't eat the main ingredient normally.

Ingredients

  • boiled carrots
  • 1 Tbsp. butter
  • 3 tsp. tarragon spice

Directions

In frying pan, melt butter. Add carrots and sprinkle tarragon. Mix and heat until carrots are hot.

Swiss Steak in Foil

Ingredients

  • 1 cup ketchup
  • 1/4 cup flour
  • 2 lb. round steak or swiss steak, 1 inch thick
  • 1 large onion, sliced
  • 2 Tbsp. lemon juice
  • salt to taste

Directions

Tear off a five-foot length of household weight aluminum foil and fold double. Combine ketchup and flour; spoon half the mixture in center of foil. Place steak on top. Season with salt. Cover meat with onion slices and remaining ketchup mixture. Sprinkle with lemon juice. Fold foil over and seal edges securely. Place in shallow baking pan. Bake at 350 degrees F for 2 hours or until meat is done. Makes 5-6 servings.

Mary's Bars

Ingredients

  • 1 package chocolate pudding (not instant)
  • 1 white cake mix
  • 1 cup coconut
  • 1 cup chocolate chips
  • 1 cup chopped nuts

Directions

Cook pudding as directed on box. Add dry cake mix, stir well. Pour in greased cookie sheet with 1 inch sides. Sprinkle on coconut, chips and nuts. Bake 30 minutes at 350 degrees F. Swirl with a little powdered sugar frosting. Freezes well.

Strawberry Puff Pancake

Ingredients

  • 2/3 cup water
  • 1/4 cup butter or margarine
  • 1 cup Original Bisquick mix
  • 4 eggs
  • 1 to 2 cans (21 oz. ea.) strawberry pie filling

Directions

Heat oven to 400 degrees F. Generously grease a 13x9-inch (3-qt.) glass baking dish or pan. In a 2-qt. saucepan, heat water and butter to boiling. Reduce heat to low. Add baking mix all at once; stir vigorously about 1 minute or until mixture forms a ball. Remove from heat. With spoon, beat in eggs, 2 at a time, until dough is smooth and glossy after each addition. Spread in the pan (Do NOT spread up the sides). Bake uncovered 30 to 35 minutes, or until puffed and dry in the center. Immediately after baking, spread pie filling over pancake. Cut into rectangles. Serve immediately.

Suggestion: Top pancake with a dollop of whipped cream or whipped topping. Top with several fresh strawberries, if desired.

Chile Rellenos Casserole

Ingredients

  • 1 large can whole green chiles (12-15 chiles)
  • 1 1/2 lb. ground or diced pork
  • 1 med. onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 water, 1 Tbsp. corn starch
  • 12-14 oz. can green chile enchilada sauce
  • seasoned salt, chili powder, cumin to taste
  • 12 corn tortillas
  • 8 oz. monterey jack cheese
  • 4 oz. shredded jack/colby cheese

Directions

Preheat oven to 350 degrees F, grease 9x13 inch baking dish. Brown 1 1/2 lbs. pork pieces or ground pork in a large non-stick skillet with a bit of oil, add onions, garlic, chiles and spices to taste. Add the broth to the sauce and bring to boil. Simmer until onions are tender, add water mixed with cornstarch.

Meanwhile, slice the block of cheese in half lengthwise, then into a total of 12 pieces to fit inside of chiles. Stuff chiles with cheese, wrap a tortilla around each one. Put 2 ladles-ful of sauce in bottom of pan, layer wrapped chiles seam side down into pan. Can lay 2 on the side. Pour the rest of the sauce over the tortillas, cover with the shredded cheese. Bake 30 minutes until brown and bubbly.

My family gave this a FANTASTIC rating!
