Moist Oatmeal Cookies

Ingredients

  • 1 cup raisins
  • 9 Tbsp. hot raisin juice
  • 1 cup margarine
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 1 cup sugar
  • 2 eggs
  • 2 cups oatmeal
  • 2 cups flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 cup nuts

Directions

Cover raisins in saucepan with water, cook until tender. Measure 9 Tbsp. raisin juice in mixing bowl.

Add 1 tsp. soda to hot raisin juice, cool slightly. Add margarine, sugar, mix well. Add eggs, mix, add vanilla. Add flour, oatmeal, salt and cinnamon, mix well. Add drained raisins and nuts, mix. Drop by teaspoonful on cookies sheet.

Bake at 350 degree F (preheated) for 10 minutes, or until light brown.

Oatmeal cookies (yum!) I have found using the baker's raisins and gold raisins make the cookies taste fab.

Moist Oatmeal Cookies

One of my favorite cookies!

Ingredients:

  • 1 cup raisins
  • 1 cup water
  • 3/4 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/2 cups flour
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 2 cups rolled oats
  • 1/2 cup nuts (optional)

Directions:

Simmer raisins and water in saucepan over low heat until raisins are plump, 20-30 minutes. Drain raisin liquid into measuring cup. Add enough water to make 1/2 cup. Cream shortening, sugar, eggs, and vanilla. Stir in raisin liquid.

Sift flour, baking powder, baking soda, salt, cinnamon, and cloves and stir in. Add rolled oats, raisins and nuts. Drop rounded teaspoon of dough about 2 inches apart on ungreased baking sheet. Bake 8-10 minutes, until lightly browned, in 400 degree F oven.

Servings: 6-7 dozen cookies
Prep Time: 15-20 Minutes
Cooking Time: 8-10 Minutes
