Easy Potatoes Au Gratin
- 1 pkg. frozen hash browns
- 1/2 cup butter, melted
- 1 can cream of chicken soup
- 1 pint sour cream
- 2 cups shredded American or Velveeta cheese
- 2 Tbsp. instant minced onion
- 1/2 tsp. pepper
Mix all above ingredients together and put in 9x13 inch pan. Bake 1 hour at 350 degrees F. If desired, top with buttered cracker crumbs before baking or top with crushed potato chips about 5 minutes before taking out of the oven.

I made this recipe for a big super bowl party we had last week. I changed the instant minced onions to 1/2 cup sliced green onions and the velveeta to real cheese. Everyone was so excited to have them and funny enough they all called them "church potatoes" as in potluck, I guess. I just know my adult sons loved these during the holidays growing up.
