Chocolate Eclair Cake

Tastes like those scrumptious chocolate eclairs you find in fancy bakeries. Quick, easy and inexpensive to prepare, and most important, it's covered with chocolate!

Ingredients:

  • 2 pkgs. vanilla instant pudding
  • 3 cups of milk
  • 1 box of graham crackers
  • 1-8 oz. container of Cool Whip
  • 1 container prepared chocolate cake icing
NOTE: You may substitute low-cal versions of the ingredients.

Directions:

Combine pudding mix with milk, and stir until it starts to thicken. Thoroughly mix in the container of Cool Whip.

Line the bottom of a 9 x 13 inch casserole dish with graham crackers.

Spread half of the pudding mixture over the first layer of graham crackers. Top with another layer of graham crackers. Spread remaining pudding mixture over the graham crackers. Top the last layer of pudding mix with graham crackers.

Heat chocolate icing until it is pourable. Spread the icing over the top layer of graham crackers. Chill until ready to serve.

You can make the chocolate icing:

Icing:
1 cup sugar
1/2 cup cocoa
1/4 cup evaporated milk
1 stick butter
1 tsp vanilla

1. Combine sugar, cocoa and milk
2. Stir over heat until boiling
3. Boil for 1 minute
4. Remove from heat and add butter and vanilla (don't worry if you add the butter initially, it will turn out the same)
5. Pour over crackers, while still hot
6. Refrigerate over night

Ingredients

  • 1 small container Cool Whip
  • Graham Crackers
  • 1 can chocolate frosting
  • 2 1/2 cups milk

Directions

Mix milk with pudding mix. Add Cool Whip. Layer whole graham crackers in 9x13 inch pan. Cover with pudding mix and another layer of graham crackers. Spread with chocolate frosting. Refrigerate over night.
