Recipes Using Apples

I was given about 5 bushels of apples. We will make apple sauce and I will do a few crisps, but I need more ideas of what to do with all of these apples. We are storing them in the basement so they will last for a while.

Peach Cream Pie

This is a real Amish recipe for Peach Cream (or as my friend Lizzy calls it Peach Custard) Pie:

Ingredients and Directions

Arrange fresh peach slices to cover a raw pie shell generously. Sprinkle a cup of brown sugar over the peaches and pour a cup of REAL cream that has a heaping tablespoon of flour blended in it. Then sprinkle with cinnamon and bake at 350 till a knife comes out clean 45 to 60 minutes or so.

Rhubarb Dream Square

Ingredients

  • 2 cups flour
  • 3/4 cup powdered sugar
  • 1 cup margarine (soft)
  • 2 cups sugar
  • 1/2 cup flour
  • 4 cups rhubarb (chopped)
  • 4 eggs
  • Pinch of salt

Directions

Mix first 3 ingredients and spread in 9x13 inch pan. Bake at 350 degrees F for 15 minutes. While baking, mix rest of ingredients and spread over baked crust. Bake 45 minutes more at 350 until golden brown.

Whole Wheat Tomato Quick Bread

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1 Tbsp. baking powder
  • 1 pinch baking soda
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. oregano crushed
  • 1 tsp. basil
  • 1/2 cup mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated
  • 1 1/2 cups fresh tomato peeled and chopped
  • 1/3 cup milk (1/3 to 1/2)
  • 2 eggs
  • 1 Tbsp. honey
  • 1/4 cup oil

Directions

Mix dry ingredients in a bowl. Drain tomatoes, pouring liquid in a measuring cup. Add enough milk to make 2/3 cup liquid.

In another bowl, blend liquid with eggs, oil and honey.

Stir into dry ingredients until moist, add tomatoes and pour batter into well greased 4x8 inch loaf pan.

Place in preheated 350 degree F oven for 60 minutes (cover with a foil tent if it starts to brown earlier - but keep baking until bottom taps hollow.)

Cool ten minutes IN THE PAN then cool throughly on rack before slicing

This keeps well in refrigerator or freezer.

Bacon Baked Chicken

Ingredients

  • 4 slices bacon
  • 4 chicken breasts, de-boned
  • 1 pint sour cream
  • 2 10 3/4oz cans condensed cream of mushroom soup, undiluted

Directions

Preheat oven to 350 degrees F.

Wrap uncooked bacon slices around de-boned chicken breasts and place the breasts in a baking dish.

Mix sour cream and soup and spoon the mixture over chicken. Cover dish with foil and bake for 1 hour.

McDonald's Big Mac

Ingredients

  • 1 sesame seed hamburger bun
  • 1/2 of an additional bun
  • 1/4 pound hamburger
  • dash of salt
  • 1 Tbsp. thousand island dressing
  • 1 tsp. finely diced onion
  • 1/2 cup chopped lettuce
  • 1 slice american cheese
  • 2-3 pickle slices

Directions

With A Serrated Knife, Cut The Top Off The Extra Bun, Leaving About A 3/4 Inch Thick Slice. This Will Be The Middle Bun Of Your Sandwich.

Place The 3 Bun Halves On A Hot Pan Or Griddle. Face Down, Toasting To A Light Brown. Set Aside But Keep Your Pan Hot.

Divide The Hamburger In Half And Press Into 2 Thin Patties Slightly Larger Than The Bun. Cook Until Done.

Build Your Mac In The Following Order, From The Bottom Up.

  • bottom bun
  • half of dressing
  • half of onion
  • half of lettuce
  • cheese slice
  • beef patty
  • middle bun
  • remainder of dressing
  • remainder of onion
  • remainder of lettuce
  • pickle slices
  • beef patty
  • top bun

To build a big mac jr. from bottom up.

  • bottom bun
  • beef patty
  • cheese slice
  • 2 pickles
  • 1/4 c chopped lettuce
  • 1/2 tsp finely chopped onion
  • 1/2 Tbsp thousand island dressing
  • top bun

Church Windows

Ingredients

  • 1 melted bag of chocolate chips
  • 1 half bag of mini colored marshmallows
  • 1 small bag of walnut pieces
  • powdered sugar

Directions

Mix together melted chocolate, marshmallows and walnuts. Take a piece of wax paper and sprinkle it liberally with powdered sugar put one third of mixture on top of sugar and shape into a roll fold the wax paper around the roll making sure powdered sugar is in between mixture and paper all over. Do the same to other two and put into the refrigerator. When chilled cut into about half inch rounds
