Hungarian Beef Skillet
- 2 strips bacon, chopped
- 1-1/2 lbs. ground lean beef
- 2-1/2 cups coarsly chopped onions
- 2 tsp. salt
- 3 Tbsp. paprika, more if desired
- 2 cans of tomatoes, chopped
- 2-1/2 cups cooked rice
- 1/2 cup water
Cook bacon in a large skillet. Pour bacon and drippings into a small bowl. Make meatballs with ground beef and brown on all sides. Add onions, and bacon with bacon drippings. Sprinkle with salt and paprika. Add tomatoes. Cover and simmer about 45 minutes. Stir in rice and water. Heat through. Water may be added if mixture becomes to dry.
