Ingredients

  • 1 lb. ground beef
  • 1 lb. ground ham
  • 1/2 cup bread crumbs (or more)
  • 1 Tbsp. chopped green pepper
  • 1/2 cup milk
  • 3 Tbsp. horseradish
  • 1/2 tsp. prepared mustard
  • 2 eggs
  • 3/4 cup ketchup
Glaze:
  • 1 cup brown sugar
  • 2 Tbsp. vinegar
  • 1/4 cup pineapple juice
  • 1 tsp. prepared mustard

Directions

Form all meat loaf ingredients into loaf pan. Bake at 350 degrees F for 30 minutes to 1 hour. Pour glaze over loaf and bake 1 hour longer, basting. Makes 10 servings.

  • 2 cups crushed Ritz crackers
Glaze
  • 1 cup brown sugar
  • 1/2 cup water
  • 1/2 cup vinegar

Directions

Mix and put in 2 loaf pans. Bake at 350 degrees F for 1 hour. Baste last half hour with glaze.

  • 4 Tbsp. brown sugar
  • 4 slices canned pineapple
  • 2 cups ground ham
  • 2 eggs, beaten
  • 1/3 cup dry bread crumbs
  • 1 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. minced onion

Directions

Spread bottom of 8 inch skillet with sugar and shortening blended together. Arrange pineapple on sugar. Combine ham, eggs, crumbs and seasonings. Place in skillet on top of pineapple. Cover tightly and cook over low heat about 30 minutes. Turn upside down on platter.

Recipe: Maple Ham Loaf

Ingredients

  • 1 lb. ground fresh pork
  • 2 lb. ground ham
  • 1 cup bread crumbs
  • 1 cup milk
  • 2 eggs, beaten
  • Parsley
Basting ingredients:
  • 3/4 cup maple syrup
  • 1 tsp. ground clove
  • 1/2 cup water
  • 1/2 cup vinegar
  • 1/4 cup brown sugar

Directions

Preheat oven to 350 degrees F. Mix ground pork, ham, bread crumbs, milk and eggs together and bake in covered roaster in the oven for about one hour. Baste at least four times with the basting mix.

Garnish with parsley. Can be eaten cold as well.

Recipe: Double-Duty Ham Loaf

Ingredients

  • 1-1/2 lbs. ground cooked ham
  • 1 lb. lean ground pork
  • 3/4 cup crushed graham crackers
  • 1/2 cup low-fat (1%) milk
  • 1/4 cup shredded carrot
  • 1/4 cup finely chopped yellow onion
  • 1/4 tsp. black pepper
  • 1 large egg, lightly beaten
  • 1 large egg white, lightly beaten
  • 1/2 cup ketchup
  • 1/4cup firmly packed light brown sugar
  • 2 tbsp. vinegar
  • 1/2 tsp. onion powder

Directions

Preheat oven to 350 degrees F. In a large bowl, mix the ground ham, pork, graham crackers, milk, carrot, onion, pepper, egg and egg white.

In a shallow baking pan, shape the meat mixture into a loaf. Smooth the top. Bake for 1 hour, drain off fat

Meanwhile, in a small bowl, combine the ketchup, brown sugar, vinegar and onion powder. Spoon half of the mixture over the meat after the first hour. Bake for 15 - 30 minutes more.

Serve with the remaining ketchup mixture

Makes 8 servings

Recipe: Glazed Ham Loaf

Great dish for company.

Ingredients:

  • 1 lb. lean ground ham
  • 1 lb. lean ground pork
  • 3/4 cup cracker crumbs
  • 3 Tbsp. chopped onion
  • 3/4 tsp. salt
  • 2 eggs, well beaten
  • 1 cup milk
  • 1 tsp. chopped parsley
  • 1/2 cup packed brown sugar
  • 1/4 cup cider vinegar
  • 3/4 tsp. dry mustard
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 Tbsp. horseradish
  • 1/4 cup sugar
  • 1 Tbsp. lemon juice

Directions:

Mix first 8 ingredients in bowl in order given, mixing well after each addition. Shape into loaf. Place in greased loaf pan. Bake 30 minutes at 350 degrees F. Blend brown sugar, dry mustard and vinegar in saucepan. Boil for 1 minute. Pour over ham loaf. Bake for 1 hour longer. Blend mayonnaise and remaining ingredients in shall bowl. Serve with ham loaf.

  • 1 can tomato soup
  • 1 1/2 cups brown sugar
  • 1/4 cup vinegar

Sauce Directions

Mix and pour over the meat before baking. Bake approximately 1 hour at 350 degrees F.

  • 3 lb. ground beef
  • 3 eggs
  • 3 cups graham crackers, crushed
  • 2 cups milk

Sauce:

  • 2 cans tomato soup
  • 1 3/4 cups brown sugar
  • 1/2 cup vinegar
  • 2 tsp. dry mustard

Directions

Mix ingredients for loaf together. Mix ingredients of sauce together. Pour sauce over loaf. Bake for 1 hour at 350 degrees F. Freezes well, even with sauce on top.

  • 2 eggs
  • 1 cup skim milk
  • 1 cup dry bread crumbs
  • 1/4 tsp. pepper
  • 1 1/2 lb. ground fully cooked low-fat ham
  • 1/2 lb. ground turkey

Glaze

  • 1/3 cup packed brown sugar
  • 1/4 cup vinegar
  • 2 Tbsp. water
  • 1/2 tsp. ground mustard

Directions

In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and turkey; mix well. In a shallow baking pan, shape meat mixture into a loaf. Bake at 350 degrees F for 30 minutes. Meanwhile, combine glaze ingredients. Spoon over loaf. Continue baking for about 40 minutes longer or until a meat thermometer reads 165-170 degrees F, basting occasionally with glaze.

  • 1 cup crushed corn flakes
  • 1 egg

Sauce:
  • 2 cups brown sugar
  • 1/2 cup vinegar
  • 2 tsp. dry mustard
  • 1 Tbsp. flour
  • 1/2 cup water

Directions

Mix first 5 ingredients and bake for 1 hour at 350 degrees F. Drain. Mix all ingredients in sauce and bring to a boil. Pour over loaf and bake 1/2 hour longer. Serves 12.

  • 1/4 cup packed brown sugar
  • 2 whole cloves
  • 1 can pineapple chunks, drained (20oz.)
  • 4 cups ground cooked ham
  • 1 cup ground beef
  • 1 cup fresh pork
  • 1/2 cup pineapple juice
  • 1/2 cup milk
  • 1 cup dry bread crumbs
  • 2 eggs, slightly beaten
  • 1 Tbsp. prepared mustard
  • 1 Tbsp. onion

Directions:

Melt butter in 9x5 inch loaf pan. Sprinkle brown sugar over bottom. Insert 1 clove in each pineapple chunk. Place clove inside down in butter mixture. Combine remaining ingredients in large bowl. Shape into loaf. Place on top of pineapple. Set inside large baking dish to catch drippings.

Bake at 350 degrees F for 1 1/2 hours. Invert onto platter to serve. Serves 6.
