Crunchy Veggie Sandwiches
Ingredients
1 cup chopped green peppers
1 cup chopped cucumber
1 cup chopped celery
1 cup chopped tomatoes
1 small onion, sliced
2 Tbsp. minced fresh parsley
1/4 cup chopped dill pickles
1/2 cup fat-free sour cream
1/4 cup reduced-fat mayonnaise
1/2 tsp. salt
1/4 tsp. pepper
lettuce
6 sandwich buns
Directions
In a bowl combine all ingredients except lettuce. Line 6 sandwich halves with lettuce. Spoon veggie mixture on top and top with the other half of sandwich. Yummy and nutritious!

These sandwiches sound really good, so healthy and crunchy too. You come up with the best recipes, and such a nice variety too!
