Crunchy Veggie Sandwiches
This crunchy veggie sandwich is great on a hot summer day or any time that you want a light meal.
- 1 cup chopped green peppers
- 1 cup chopped cucumber
- 1 cup chopped celery
- 1 cup chopped tomatoes
- 1 small onion, sliced
- 2 Tbsp. minced fresh parsley
- 1/4 cup chopped dill pickles
- 1/2 cup fat-free sour cream
- 1/4 cup reduced-fat mayonnaise
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 6 sandwich buns
In a bowl combine all ingredients except lettuce. Line 6 sandwich halves with lettuce. Spoon veggie mixture onto lettuce and top with other bun half. Yummy and nutritious!
