Making the Most of Summer's Bounty

The price is right but you're worried you won't get through it all. Don't be afraid to pick up that punnet of peaches, giant watermelon or dozen ears of corn.

Grill them: Barbecue a large batch of veggies (like zucchini, eggplant, peppers, and red onions) and keep in the refrigerator to add to salads, sandwiches, wraps, or pizzas throughout the week.

Freeze them: Store some summer sunshine for winter by freezing your excess fruit - berries and stone fruit freeze especially well. Wash, slice (if necessary), and freeze in a single layer on a tray. Once frozen, transfer to a resealable plastic bag.

Blend them: Chop and remove seeds from whatever soft fruit you have on hand (like peaches, nectarines and watermelons) and whiz in a blender with fruit juice or add a banana and yogurt to create a satisfying smoothie.

Chop them: Whether you have extra veggies or fruit, chop them up for a salad. Explore different combination. Veggies pair well with simple olive oil and vinegar, while fruit tastes great with a drizzle of honey.
