- 4 eggs, well beaten
- salt and pepper to taste
- 1 small tomato, cleaned, stemmed and finely diced
- 1/4 cup finely diced mushrooms
- 1 green onion, diced or grated
- cheddar cheese, grated
Beat eggs in bowl adding about 1 tsp. cream. Gently fold in all ingredients. Pour into well-buttered omelet pan. Place over low heat and cook slowly. Serve hot.
