This is a wonderful recipe that can be made in the crock pot or oven. Made from a cut called Boston butt, that is great for slow roasting and goes a long way. The left over pulled pork can be frozen, and pulled out of your freezer. Serve for lunch, dinner or for those unexpected guest.

This is called Japanese Jiggly Cheesecake because it actually jiggles like crazy when it comes out the oven. It's like a cross between an angel food cake and a pound cake, with a lightly sweet cheesecake flavour. In Japan, this is more widely known as a soufflé cheesecake, and has been around for decades.

If you'd like this to be truly gluten free, use gluten-free oats. Most standard oats are processed in places that handle wheat, so be sure the packaging reads that it is gluten-free. I make these in my toaster oven quite frequently, and just up the baking time by about 4 minutes.

Chocolate Covered Swedish FishI had a big love for chocolate covered gummy bears until I realized that the chocolate would instantly melt off once in your mouth, quickly turning the treat into plain old gummy bears with a flash of chocolate. Because Swedish fish are a bit firmer and you can easily bite into them, the chocolate to gummy ratio is consistent and makes for an awesome sweet snack. I one-upped them by using some of the reds and whites from my Christmas sprinkles to decorate them. It also gives them a nice texture!
