Avocado and Sweet Potato Brownies

hand held Avocado and Sweet Potato BrowniesI changed a recipe that was shared to me on Facebook. The original recipe states it's a delicious healthy brownie and I wanted to try it. I didn't have maple syrup or coconut milk so I just substituted those with what I had on hand and added a little sugar for more sweetness. I also added pecans which gives it a nice crunch.

It turned out mushy, however, after chilling it, I was able to cut it into squares and freeze them. I eat them frozen. To me, it's a real treat and tastes like a combination of a Fudgesicle, semi-sweet fudge, and brownie. I love it. I think it's the chocolate that I have become addicted to.

Ingredients:

Steps:

  1. Preheat oven 325 degrees F. Line a 2 quart Pyrex dish or baking pan with parchment paper.
  2. Mash avocado and sweet potato until creamy.
  3. In a medium mixing bowl, blend all ingredients together except chocolate chips and pecans.

  5. When mixed well, add chocolate chips and pecans.

  7. Spread in baking dish and bake for 20 minutes.

  9. Cool and chill or freeze before cutting.

  11. Store the slices, separated with wax paper, in a freezer container and keep in the freezer. Serve as a frozen treat.

I learned a new trick. I made another batch of these brownies and decided to use corn syrup instead of pancake syrup. I measured the cocoa before the corn syrup and was surprised when the corn syrup did not stick to the spoon. This made measuring and clean up much easier.

By the way, they turned out delicious but can't eat much as these are so fattening.

Recipe from 2/2020
I've gotten behind on trying some of my 'saved' recipes but I decided to try this one during our 2021 Holiday season and it turned out great.

I substituted dark chocolate for the regular chocolate chips and omitted the nuts as some of my family members cannot eat 'regular' chocolate and some do not like nuts in their brownies.
I also used a small amount of honey instead of syrup and omitted the sugar.
It turned out that everyone could have a 'piece' even if they have different tastes.
I did not keep up with every change but this just means it is a great recipe that can be changed and still turn out to be a 'keeper'.
