Buttermilk Muffin on plateI found this in a very old Southern cookbook because I had some leftover buttermilk from another project. They are really delicious and soft and rise very well. I highly recommend this recipe.

Steps:

  1. Preheat oven 400F. Grease muffin tins.
  2. Sift flour, corn meal, salt, and baking soda, three times.
  3. Cream sugar and eggs. Add milk.
  4. Add flour mixture to wet ingredients.
  5. Beat mix hard for one minute.
  6. Bake at 400F for 20 minutes.

They look so good. I can see by the recipe how they would almost have a cake like texture. I must try this. I like any breads with a buttermilk flavor.
