Description
I was craving butterscotch pudding, but hadn't realized how easy it was to make. You can eat this at any temperature, but since we live in a hot climate we chose to wait until it was chilled.

Ingredients:

  1. In a heavy bottomed pan whisk together the dark brown sugar, cornstarch and salt.

  3. In another bowl stir together the egg yolks and milk.

  5. Then pour the milk and egg mixture into the pan.

  7. Heat on medium heat, stirring constantly for about 10 minutes until the mixture starts to bubble and reaches pudding thickness.
  8. Butterscotch pudding being cooked on the stove.
     
  9. Let it bubble for about 30 seconds, add the butter and remove it from the heat. Keep stirring until the butter is well incorporated.

  11. Pour the pudding through a fine sieve to remove any lumps. Don't forget to lick the spoon ;)

  13. Lay parchment paper on top of the pudding and let cool.

In the end we decided we liked this best frozen, otherwise it was a bit too sweet for us.
