I am going to go from dark to blonde and I realize I have to strip my hair first. It says it makes your hair devoid of all colour, but mine goes bright ginger. Is that normal?

First, I'd go to a pro if this is the first time. You are probably not using the right level of peroxide (20-30-40 - what you need is 40) plus, depending on your natural color, you may have to add a powder booster to that. Beware though because you can really damage your hair. You need to wait and deep condition your hair before trying again. Regular mayo and a plastic shower cap is a way a hair dresser suggested to me when I did platinum blonde years ago. It's very high maintenance.

My hair is naturally black. I dyed it blonde to get brown, but I wanted it to be a lighter brown. Will dyeing it again give me a lighter brown than the first time or will it give me the same results?
To make hair lighter, you need to lift off the dark color and deposit the lighter color. This two-step process is better off done in a salon.
I used a professional color remover in my salon. I removed a darker color from my client's hair. She wanted a light to medium brown color.

No. To go from dark to light is a two-step process. The dark color has to be lifted off, and the lighter color deposited. You cannot dye over it.
Whatever you try to do with your hair, when you have black, it is always best to not try home solutions and talk to a pro. They can tell you if your hair is healthy enough to do anything to it and if the process can even be done!
I had my hair silver and then I tried going lavender. It failed, I got mint green. After I put dark purple on to hide the green, but the dark purple kept fading so I went dark brown. I see no more green, but my hair has some light shades of brown because I was letting the darkness fade.
