Cheese treat on plate.I use to make a wicked baked macaroni and cheese, with two kinds of cheese for the macaroni and a third for the topping. On one occasion I baked that and an apple cake based on a carrot cake recipe, that Mama took to a church social. When I picked her up, I asked how the macaroni and cake tasted. She said, "I don't know. It was all gone before I got to taste either".

I don't cook like that anymore. Anything I cook now is usually quick and easy. When I did cook macaroni, I let the cheese topping get a little brown and crusty around the edges. To me, that was the best part of the dish. With that in mind, I contrived a little snack I can't get enough of; simple, quick and delicious.

Sooo good, people. And if you were doing this for breakfast, you could put scrambled eggs atop the snack once it has finished cooking. Much, much better than scrambled eggs with the cheese just melted on top or mixed in when scrambling.

Go for it, y'all!

Steps:

  1. Cut French bread into about 3/4 to an inch slices. Put a thin film of mayonnaise on one side of each.
  2. Put the slices in a non stick pan greased with melted butter, mayo side up. Then sprinkle a hefty layer of finely grated cheddar cheese on top. Watch and check closely. When the bread has toasted to a nice golden brown on the bottom, flip it over.

  4. With the cheese on the bottom, you have to work quickly. In less than a minute, the cheese will turn a rich, crusty brown, just like on the macaroni. Immediately remove from the pan onto a ready plate.

So - when is the apple cake recipe coming?

I'm afraid there won't be an apple cake recipe coming. It is so delicious, I would love to share it with everyone. There are several reasons I wont post it. First, I would have to find the carrot cake recipe. Then I would have to remember how I modified the recipe for apples. I do know I changed the spices.

The cake was so unbelievably moist, I think it did better as 3 layers instead of two. And I used 9 inch pans.

With all that out of the way, I don't think ThriftyFun would let me post just the recipe. They would want pictures of me preparing the cake, and as I said, I haven't cooked like that in years

You can post a recipe without the pictures if you want, it just is harder to be selected as a winner for the contest. It sounds delicious.
