Chocolate Chunk Banana Protein Muffins

The muffins cooling on a cutting board.I love making these little protein muffins. They are wonderful as a post-workout snack. I also like to have one for dessert as they keep me from waking up in the middle of the night from hunger pangs. When you have them warm out the oven, the chocolate chunks are super gooey and lovely. You can achieve this later on by popping one in the microwave for 10 seconds.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

Ingredients for chocolate chip banana protein muffins.
 

Steps:

  1. Preheat oven to 350F. Mash banana with a fork, then add vanilla.
  2. Mashed banana and vanilla.
     
  3. Stir in egg whites.
  4. Adding egg whites.
     
  5. In another bowl, mix flour, protein powder, sugar, and baking soda. Stir it into the wet mixture.
  6. Adding dry ingredient mixture to the wet mixture.

  7. Blend in the yogurt.
  8. Mixing in the yogurt.
     
  9. Stir in the chocolate chunks.
  10. Adding chocolate chunks to the batter.
     
  11. Grease your muffin tins and pour in the batter.
  12. Adding the batter to the muffin tins.
     
  13. Bake for 15-20 minutes, until cooked though. Allow to cool before removing from tins.
  14. The melted chocolate inside the freshly baked muffins.

They look delicious and inviting! So I copied the recipe and plan to bake some as a celebration of getting my oven fixed (next week I hope). The ingredients are all nutritious, and I'm a big user of protein and collagen powder as I have osteoporosis.

Healthy snacks like this are a big plus with significant-others like mine, who would otherwise care less about "healthy"! Thanks so much.

Today kids eat way too much sugar and junk food. This is one way to make sure they get a healthy snack.

What I like the most is the recipe doesn't add any sugar so it makes it even better for the kids.

Exactly :) Same goes for feeding my hub. He's a super sugar addict, and giving him these makes him as happy as eating his favourite chocolate caramel cookies, but he's mostly having banana sugars.
