That's good to know. I have a recipe for Mozzarella and Ham Chicken Thighs that we love. It calls for boneless thighs.

Thanks for the detailed write up, that is very helpful. I usually get my chicken from Costco, all sealed up for the freezer so I don't have to mess with the bones, but sometimes you find a great deal.

I do the same but not so good at deboning. But cut 2 pieces from each side. I end up with a bone with meat attached.

Use that to make chicken soup. Smaller bit work fine for smaller portions, which as seniors, we eat now.
