Ingredients:

  1. Preheat oven to 375 degrees F.
  2. Line a baking sheet with foil, and put the eggplant on it.
  3. Roast it until tender, around 50 minutes.
  4. Let it cool for 20 minutes, then slice it in half lengthwise.
  5. Scoop out the flesh, and place it in a bowl.
  6. Then stir in the egg and beans.
  7. Then add the garlic, basil, Parmesan, salt, and pepper.
  8. Mix in the breadcrumbs.
  9. Line a baking sheet with foil. Mist with spray (I omitted this step).
  10. Shape the eggplant mixture into balls and place on the sheet. Mist with spray (I did not mist).
  11. Bake balls about 20 minutes, until they are golden.

  13. Sprinkle with a little Parmesan and serve with the marinara sauce.
