You can turn it into a beautiful trifle using unsweetened whipped cream and berries. Layer the whipped cream, cake crumbles, and fruit in a big bowl or individual glasses.

The flavor of cake may have something to do with what you can actually use but you can use unflavored whipped cream, Greek yogurt, sour cream, or even drizzled straight black coffee over the top on almost any flavor.
Break/slice it into one serving size pieces and add one of each choice and see how it taste. You may have to just consider it a loss and adjust the next cake baking recipe.

Make it into a truffle layering crumbled cake, whipped cream, & sliced fruit. If it's a chocolate cake, try pouring a cup of cold coffee over the cake layer and then a layer of chocolate or vanilla pudding, whipped cream, Repeat layers and then a little shaved chocolate on top

I've done variations of this with gingerbread, white cake, yellow cake, spice cake, and chocolate cake. The whipped cream and pudding tones down the sugary cake. Try this and you may have your new favorite dessert!!.

Dependent on what flavor of cake you have baked, if it is a white or yellow cake you can slice it up and place the slices under a broiler for a few minutes to lightly toast the slices and top with fresh berries and a dollop of light whipped cream, or even a scoop of ice cream. Since you don't want to add to the sweetness of the cake, this is a great way to avoid the heavy sugary frosting and still enjoy your cake and eat it too. :)
