Four Egg Omelet

Omelet covered with salsa on plateThis is a great omelet to share with somebody. You can use whatever veggies, meat or cheeses you prefer, and adjust it to suit your taste. It is a great way to start any day.

Cook Time: 7-8 minutes

Total Time: 30 minutes

Ingredients:

  1. Heat 1 Tbsp. butter in large non stick frying pan. Add onions, green peppers and mushrooms. Cook until vegetables are tender. Remove from pan.
  2. Cook bacon and ham. mix up with cooked vegetables. Set vegetables and meat aside.
  3. Beat together the eggs, milk, salt and pepper until blended.
  4. Melt remaining butter in frying pan. When the frying pan gets hot, slowly pour the eggs in. Cook eggs for about 2 minutes. Gently lift the omelet edge with spatula, so that the uncooked eggs flow to the edges.
  5. Cook for another 2-3 minutes until center looks dry.
  6. Sprinkle the cheeses over the eggs. add the vegetables and meat mixture.

  8. Using a spatula gently fold half of the omelet over the mixture. Cook another 2 minutes until cheese is melted.
  9. Remove omelet from frying pan. Top with salsa, cut in half and serve.
