Garden Basil Lime Frosting

This fresh, minty frosting goes great with zucchini bread or cakes! Using basil as the unique compliment to the lime, this is a real summer taste treat! A nice change from the store bought, overly sweet, generic tasting icings sold! ENJOY!

Yield: Frosted 2 zucchini breads or one cake - may double recipe.

Steps:

  1. Cream together cream cheese, butter and confectioner sugar.
  2. Finely chop OR process most of the fresh basil leaves. Optional: you may place one or two on the top of the iced zucchini bread or cake if desired, just to be pretty.
  3. Mix basil and juice and zest of lime into the cream cheese/butter mixture.
  4. Frost your favorite cake or sweet bread for a fresh, unique summer treat!

You may also dip fruit into it on a tray for a fancy summer party, just add a spoon or two of slightly warmed milk to thin it. Try it!
