Grandma Anita's Biscotti

This recipe came from Italy when my great grandmother immigrated to the USA from Italy. This is her original biscotti recipe, easy, inexpensive, it and tastes utterly fantastic.

About 10 years ago we sold these biscotti logs and paid for a trip to Brazil for my mother. How's that for "frugal living"? You only need to bake this recipe once, not twice.

Ingredients:

  • 4 eggs
  • 1 stick of margarine
  • 1/3 cup sugar
  • dash of salt
  • 1 package of slivered almonds
  • 1 tsp. vanilla
  • 2 tsp. baking powder
  • 4 cups flour (add flour slowly, until smooth, not sticky)

Directions:

Pre-heat oven to 400 degrees F.

Mix sugar, eggs, vanilla, and soft margarine first. Add salt and baking powder to the mixture. Next, add flour and mix well. Add almonds.

Roll into a log shape and bake on a prepared baking sheet. Try to flatten out the log before baking, so that the center is not too high. Bake for about 20 minutes.

May be frozen to use later.

Prep Time: 15 Minutes
Cooking Time: 20 Minutes

It seems something should come after the baking. Do you then slice it into pieces and if so why don't you bake it longer? Recipe sounds unfinished.

How do you turn this into 20 servings? Cut after baking, break up or what. Not like any biscotti recipes I've ever baked. Sounds wonderful, but a bit confusing to me.

This recipe makes no sense. Please complete directions - bake the whole recipe in one big mass?

I'd like to add instructions to to my recipe. You are supposed to slice the baked dough into thin slices. It should serve 20, with each piece being small. This biscotti is not twice baked biscotti, it is once baked.

They are rather thin slices. Many of our family and friends have enjoyed this biscotti over the years with coffee or tea.
