Hearty Sausage Chickpea Veggie Soup

A bowl of hearty sausage chickpea veggie soup.I run to make this soup when I notice I have an abundance of veggies in my fridge. You don't even have to use these same veggies that I use in this recipe. I know I always change it up! After I boil the veggies, I puree them, add chickpeas and cooked sausage. This soup doesn't need too many herbal additions as the sausage and veggies bring a lot to the table. Really hits the spot on a cold day!

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 6 servings

Ingredients:

Steps:

  1. Heat some oil in a large pot over medium heat. Add onions and garlic. Cook until softened, about 5 minutes.
  2. Chopped onions in a large pot.
     
  3. Stir in bell peppers and cook for a few minutes.
  4. Vegetables in a large pot.
     
  5. Add tomato paste, stirring until it browns a bit.
  6. Adding tomato paste to a large pot of vegetables.

  7. Stir in oregano. Add chopped parsnips and potatoes.
  8. Adding spices to a large soup pot.
     
  9. Add broth. Bring to a boil. Allow to cook until potatoes and parsnips are soft enough to easily prick with a fork, about 20 minutes.

  11. Puree soup until it's smooth using an immersion blender, or remove from pot and use blender or food processor. Be careful as it's hot.

  13. Return to pot over low heat and stir in chickpeas. Allow to cook as your prepare the sausage.

  15. Cook ground sausage in a pan over medium-high heat until cooked, crumbling the big chunks with your cooking spoon.
  16. Cooking sausage in a pan.
     
  17. Stir cooked sausage into the pot of soup.
  18. Adding the cooked sausage to the soup.
     
  19. Cook a few more minutes for flavours to roam around. Add salt and pepper to taste. Serve immediately.
  20. The completed soup in the pot.

Cold days in L.A.?

This looks delish, Toosa, and I'm betting the vegans in the crowd can use TVP (with perhaps a few extra spices) instead of sausage.

My family and I visited L.A. in December one year. I remember going to Starbucks and seeing all these people in hats, scarves and gloves. It was a balmy 65 degrees. At home in Oregon, temperatures like that would have been cause for shorts and sandals. It's all in what you are used to.
