A container of pudding with coconut on top.This is a great way to use up milk. I made it chocolate by adding 3 Tbsp. cocoa powder to the sugar/cornstarch/egg mixture. I like this recipe because it doesn't have a lot of sugar in it. I topped mine with shredded coconut.

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 4-6

Steps:

  1. Mix the sugar, cornstarch, cocoa powder (if using)and salt in a saucepan.
  2. Add the eggs to the sugar mixture and slowly stir in milk until combined. I found that a whisk is the best way to combine the ingredients.
  3. Mixing pudding in a saucepan.
     
  4. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil and stir 1 minute.

  6. Remove from heat. Stir in the butter and vanilla.

  8. Let it cool off around a half an hour.
  9. Chill in the refrigerator until ready to serve.
  10. Placing the pudding in a tupperware container.
