My questions would be:
How many guests will be at the party?
Do the 100 kabobs mean for 100 guests or does this mean 2 or 3 kabobs per person?
Will all guests be adults or will there be children also?
Is this a lunch or dinner party?
Will this be a sit-down party or a stand-up/walk-around party?
Will there be other food available or is this the one and only type of food?
Have you made kabobs for a large crown before?
I'm only asking these questions because the answers will sometimes make a big difference in how much food will be needed.

I think you want to make Chicken and Pineapple Kabobs.
I found such recipe for 8 kebabs www.simplyrecipes.com/.../
For 100 kebabs according to the recipe I found, you need:
18.8 pounds chicken (breast or thighs)
12.5 pineapples
12.5 green bell peppers
12.5 red bell peppers
But if you want to use bell peppers of three colors, then about 8.5 bell peppers of each of the three colors.

But better make a few extra kabobs.

I think this post "Making Kabobs for a Large Group?" will be very helpful: www.thriftyfun.com/Making-Kabobs-for-a-Large-Group.html
I think 4 pieces of chicken per skewer (75 g for one kebob), so about 16,5 pounds of chicken.
