I have a limited edition Kewpie 100th anniversary doll still in her box. She's never been taken out at all. I actually still have the shipping box as well. She's 30 inches tall and am finding very different prices on her. Could someone please help me?

You cannot put any credence in asking prices that you're seeing online as an asking price is only a price a seller would like to receive for their item and has very little to do with value unless it sells at that price.
Current value is based upon an identical sold item as it shows what someone was willing to pay for that item.
eBay's sold listings are presently showing 3 dolls that appear to be almost identical to your doll so you may be able to average the three prices and find a 'current value'.
This doll is shown on Worth Point and I believe it sold in 2019 for $150. Check out this site as it has a lot of information about this doll.

Please be aware that sales are unpredictable and your doll may sell quickly or it may take months/years before it sells.
Only go by sold prices for your exact doll. I see 4 sold (on eBay) that look identical, so you would average those prices together, to get the average total value (add the green sold price + shipping), then add the 4 totals together, and then divide by 4 and that will tell you the total average value. If I did the math right, the average total selling value (item + ship) = 156.74.
That is a potential amount you could ask if you were NOT shipping it--like if you advertised it for local pick up. People will negotiate down with you--so start higher.
If you are selling it online, you would have to reduce offering price to include shipping because the buyers are looking at total costs of what they pay.
Are you an experienced seller online and familiar with how to ship very fragile items? If not, I don't recommend starting you online selling with a doll. There is too much risk for breakage. You may do better in a local sale.
If you are an experienced seller and comfortable with shipping breakables (double boxing, knowing how to accurate calculate shipping), go for it!
