Cook Time: 1 1/2 - 2 hours

Steps:

  1. Prep rub ingredients by chopping rosemary and garlic. Add to a bowl with salt and black pepper. Mix ingredients.

  3. Pour olive oil in and mix.

  7. Tie lamb up and rub the remaining marinate on the outside.

  9. Preheat your oven to 350°F. Roast lamb in the middle of oven for about 1 1/2 hours or longer until internal temperature is 130°F. *Time varies depending on your oven and weight of lamb. I used a thermometer. Once the roast reaches 130°F, take out and allow lamb to rest before cutting.

Since boneless leg of lamb is kinda costly, this recipe would work very well with boneless pork loin.
