Macaroni Beef and ZucchiniIt's farmer's market time! I am getting all my produce at the farms, and using it in everything I can. This is actually my American Chop Suey with fresh basil, onions, and zucchini. Ah, what a great taste the zucchini has.

Ingredients:

Steps:

  1. Put a pot of water on for pasta, salt lightly, and add 1 Tbsp. olive oil. When water comes to a boil, add pasta. Let this simmer on low until pasta is cooked al dente.
  2. While pasta is cooking, heat a large skillet. Add 1 Tbsp. olive oil, and brown the ground beef. Add all chopped veggies and stir well.

  4. Add fresh diced tomatoes. Stir in well. Add the Parmesan cheese, and all remaining spices.
  5. Macaroni Beef and Zucchini
     
  6. Strain pasta. Keep a bit of pasta water and toss pasta in the beef mixture and turn off the heat. Mix and toss well.
  7. Macaroni Beef and Zucchini
     
  8. Serve with a spoonful of shredded Parmesan or other grated cheese.
