Making Fake Cheesecakes for Display?

cheesecake on glass plateHow do I make my cheesecake for a display? They will be outside at a farmer's market, so heat and cold will be a factor. I don't want them to dry out and I need them to be the exact dimensions of my different sizes. I want them to look "real".

The first thing that occurs to me is to use styrofoam and paint it the appropriate cheesecake colour
