Making "Hard Boiled" Eggs in the Oven

I just tried this for the first time and it works great. To make the best and easiest hard "boiled" eggs; preheat oven to 325 degrees F. I used a muffin tin to make it easier to remove eggs when done, but you can put them directly on the oven rack. Cook eggs for 30 minutes then immediately put them in very cold water. I cracked mine while they were cooling in the water and they were so easy to peel. My eggs came out perfect.

For years, I boiled eggs in different ways. I put eggs in cool water and brought them to a boil and let them sit for 15 minutes. They usually turned out okay, but every so often one would break.

I started baking them in the way recommended above a couple of years ago, and we really like it. I do a dozen at a time and keep them in a carton that is clearly marked. My husband is diabetic, so having hard-boiled eggs for him is a good thing. I like to fix a couple for breakfast a few times a week.

The only time I've had one break is when I left them in the oven too long.
