Ingredients

  • 1/2 lb. saltines (2 strips)
  • 1 stick margarine (or butter)
  • 1 small container oysters
  • milk
  • salt and pepper

Directions

In buttered casserole, crumble 1 strip crackers. Add 1/2 oysters and juice and 1/2 butter. Add second strip crackers and remaining oysters and juice. Pour 1/2 stick melted butter over top. Salt and pepper. Add milk 'till crackers float.' Bake 40 minutes at 350 degrees F.

Cook celery and onions in butter until tender, but not brown. Add crumbs, oysters, bay leaf, seasonings and eggs. Add enough liquid to moisten; you don't want the mixture dry, but it must not be too moist.

Mix sage and hot water. Beat eggs and 1/3 cup water together. Combine all ingredients and let ripen 3-4 hours. For a southern touch, substitute cornbread for half the bread.
