Mom's Potato and Bread Stuffing

I make an old fashioned type of stuffing for both Thanksgiving and Christmas.

Total Time: About 1 1/2 hours 30-40 minutes to cook

Yield: 12-20 Thanksgiving Dinner

Ingredients:

*I can still make my mom's by drying out the bread and seasoning it in the oven as she did. I don't see a difference except for time!

**Using a large number of mushrooms (fresh), just snap off the stem and chop the stems. Put the mushroom caps aside for later, use sliced for the gravy.

Steps:

  1. Using the giblets and neck of the turkey, put in a large saucepan and boil, adding half the onion and celery, a bay leaf, 2 large Tbsp. of Bell's Stuffing Mix or lots of sage, salt and pepper. Let this low simmer overnight, checking frequently for keeping the water up. This is going to be used for the stuffing and your gravy. Have an extra chicken broth on hand, in case you need more.
  2. In a very large deep covered skillet, melt 2 sticks of butter (I use 3). Add onions, celery, mushrooms, green pepper, oysters and sausage. Stir everything together and let all the veggies cook down. Lower the heat, to simmer with the cover, for about 10 minutes.
  3. Add chicken broth, 1-2 cups of the broth you have brewing on the top of the stove (full of flavor). Now, mix very well, Add seasonings. After a few minutes, taste, don't add extra yet.

    Add your well mashed potatoes, turn off the heat. Fold in the potatoes, until everything is mixed very well. Add your 16 oz. bag of herb crumbs and fold this in. If it seems too dry, add more chicken broth.

    After this is all mixed, take a test taste, What might it need? Most of the time, it will need more sage and a bit more salt, using seasoned salt. Or that extra stick of butter.

  5. Pour your dressing into a well greased 13x9 inch deep pan, cover with foil and bake until stuffing is golden, about 25-35 minutes at 350 degrees F.
