Oatmeal Nut Muffins

These make a great, soft muffin. Very hearty for any meal, but especially good at breakfast.

Ingredients:

1 cup flour
2 1/2 tsp. baking powder

1/2 tsp. salt
1/2 tsp. baking soda
3/4 cup quick cooking oatmeal
1 egg
3 Tbsp. shortening
1/2 cup milk
1/3 cup chopped nuts

Directions:

Sift dry ingredients; add uncooked oatmeal. Add remaining ingredients, stirring only until moistened. Fill muffin tins 2/3 full and bake 20 minutes at 400 degrees F.

Servings: 10-12

Prep Time: 15 Minutes

Cooking Time: 20 Minutes

I made these a few times according to the recipe, and they were pretty good. I love the texture. It makes six muffins just the right size (for me, at least). I bake them in my toaster oven.

I did feel that they could use a little sugar, so after the first few batches, I added 1/3 cup of granulated sugar to the dry ingredients, and I thought they came out even better.
