Parmesan Yellow Squash

The squash rounds on a dinner plate.We have enjoyed the yellow squash from our garden this year. Although, there are many ways to prepare squash, this is one of my favorite. It's quick and easy and so good.

To keep from heating up the kitchen, in this 90 degree weather, I bake it out on our screened porch in the toaster oven.

Ingredients:

Ingredients for Parmesan Yellow Squash
 

Steps:

  1. Preheat oven to 425 degrees F.
  2. Cut squash into 1/4 inch round slices.
  3. Slice yellow squash into rounds.
     
  4. Place in a mixing bowl.
  5. Add enough olive oil for a light coating.
  6. Add garlic powder, salt and pepper to taste.
  7. Sprinkle a little grated Parmesan cheese on the squash.
  8. Mixing the ingredients together.
     
  9. Stir until all are coated.
  10. Place on a baking sheet lined with parchment paper.
  11. Laying the squash rounds on a cookie sheet.

  12. Use a spoon to add more parmesan cheese to tops of squash rounds and spread over the squash.
  13. Adding parmesan to the squash rounds.
     
  14. Bake until golden brown approximately 20 minutes.
  15. The baked squash rounds on a cookie sheet.
     
  16. Enjoy.
