Peanut Brittle

Ingredients

  • 3 cups sugar
  • 1 cup water
  • 1 lb. raw peanuts
  • 1 Tbsp. soda
  • 1 cup corn syrup
  • 1/4 cup butter

Directions

Mix sugar, syrup and water and boil until hard ball will form when sample is tested in ice water. Add butter and peanuts without removing brown skins. Stir constantly and cook mixture until it turns a light brown and peanut skins pop open. Remove from heat, add vanilla and soda stirring rapidly. Pour onto a greased surface and stretch candy as thin as possible. When cool, break into pieces.

Microwave Peanut Brittle

  • 1 cup white sugar
  • 1/2 cup white corn syrup
  • 1 cup peanuts
  • 1 tsp. butter
  • 1 tsp. vanilla
  • 1 tsp. baking soda

    Combine sugar and corn syrup and microwave on HI for 4 minutes. Add peanuts and microwave on HI for 4 minutes again. Stir in butter and vanilla. Blend well and microwave for 1 minute longer. Add soda and stir fast, but not too long.

    Turn out on well greased (PAM) jelly roll pan. Let cool and break into pieces. (01/29/2010)
