Porcupine Meatballs

A variation on the recipe I got years ago from my mother in-law. These are just as good as hers.

Ingredients:

  • 1 lb. ground beef
  • 1 can tomato soup
  • Advertisement

  • 1/4 cup uncooked rice
  • 1 egg, slightly beaten
  • 1/8 cup minced onion
  • 1 tsp. salt
  • 2 Tbsp. shortening
  • 1 cup water

Directions:

Mix 1/4 cup tomato soup with ground beef, rice, egg, onion and salt. Shape into 1 1/2 inch balls. Brown in shortening. Blend in remaining soup and water. Simmer 40 minutes, or until rice is tender. Stir occasionally.

Servings: 4
Prep Time: 15-20 Minutes
Cooking Time: 40 Minutes

Oh goody, goody! I can't tell you how long I've tried to remember this recipe. My late mother made them often when we were kids and the whole family loved them. I will make extra batch next month for the reunion. Thank you!
