Prep Vegetables and Store in Fridge

Chopped vegetables in small glass bowls.I hear that much our the fresh produce that people buy goes bad before they ever eat it! What a waste of resources and money!
I now chop up some of the vegetables (onions, bocchoy, green peppers, etc) as soon as I buy it and keep it in my refridge for use throughout the week! I find that I eat more vegetables this way too, adding them to eggs for an easy omelet or into simple salad greens and even soups. It's even a healthier snack alternative for me and the family. Bocchoy and peanut butter is juicy and delish!

I also cut them up to leave in my daughters refridge. With new TWINS she has little precious time right now so the prep really helps!
