  1. Preheat oven to 350 degrees F.
  2. Line baking sheets with parchment paper.
  3. Cream the butter with the sugar. Beat in the pumpkin, egg, and vanilla.
  4. Stir in the flour, baking soda, baking powder, salt, and cinnamon into the pumpkin mixture. Blend until combined.
  5. Drop teaspoonfuls of dough onto the prepared baking sheets. Bake for 12 to 14 minutes.
  6. While cookies cool completely, prepare filling.
  7. Cooling pies.
     
  8. Combine the filling ingredients and mix until smooth and creamy. This will take about 5 minutes.
