I have no idea why this is called "creole", since it is very mild. It's good, plain home cooking, which I consider some of the best. It's all in one pan, too.

Ingredients:

  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 sweet pepper, chopped
  • 1/2 lb. ground beef
  • 1 (20 oz.) can tomatoes, drained and chopped
  • 2 cups butter beans, drained thoroughly
  • 2 cups cooked macaroni
  • 1 tsp. oregano
  • 1/2 cup corn (optional)

Directions:

In a large skillet, saute the onion, garlic, and pepper in bacon fat. When the onion is translucent, add the ground meat, breaking it up as you cook it, and brown it well. Add the rest of the ingredients, and simmer 15 minutes, or until heated through and cooked down until it isn't soupy.

Prep Time: 5 Minutes
Cooking Time: 25 Minutes

Source: Many years ago, my mother, Vicy, found this recipe on, of all places, a matchbook! It became a family favorite. I often add in more veggies, like sliced zucchini. It really stretches the ground beef, though I've also been know to add in a whole pound.

Ingredients:

  • 1 can whole kernel corn
  • 1 can cream corn
  • 1 stick butter
  • 1 cup macaroni
  • 2 cups Velveeta cheese
  • diced onion
  • salt and pepper, to taste

Directions:

Mix all ingredients together in covered dish and bake at 350 degrees F for 30 minutes with lid and then 30 minutes without lid.

Brown the hamburger and drain. Mix the hamburger and all of the other ingredients together, except for the cheese. Pour into a 9x13 inch pan. Top with the cheese and bake at 350 degrees F for 20 minutes.

Reserving several pepperoni slices for garnish, combine remaining pepperoni, tomatoes, soup, uncooked macaroni, 1 cup cheese and water in a large bowl. Pour into a 2 qt. baking dish. Sprinkle remaining 1 cup cheese on top.

You can do anything with macaroni.

On its own with olive oil and basil and oregano.

With a fresh seasonal veggie.

Sprinkle some fresh ground pepper and grated parmesan or romano on it.

Google "pasta primavera" for some nice veggie, springtime pasta dishes and use macaroni instead of whatever pasta the recipe calls for.

My family loves my "Italian Pasta Salad".

Pasta: Any kind, 1 box
Chicken: Anything leftover or boneless Chicken breast cooked in the microwave and cut into small chunks or small torn pieces.

Cucumber: Peeled and cut into small cubes.
Tomato: Whatever type you have on hand. Also cut into small cubes.

Black olives: Optional. Drained and sliced.
A small bottle of Italian Dressing: use enough to coat everything

Throw everything together in a bowl! Quick meal and great for picnics. Also, tastes great the next day.
Garlic powder, salt and pepper added to taste only if needed.

Hi,
here are three recipes we use all the time.Hope you enjoy:

Italian cheddar bake
2 boxes of mac n cheese dinners
1 lb of ground hamburger or ground turkey
1 large can of diced tomatoes
1 bag of shredded cheddar cheese

Make mac n cheese like box says. Brown your meat,add tomatoes. Mix all together in a casserole dish(13x9) and top with cheese. Bake at 350 just until bubbly and cheese is melted. 20 Mins or so

easy lasagna
1 lb of hamburger or ground turkey
2 boxes of mac n cheese
1 jar or can of spaghetti sauce
1 bag of mozzarella cheese

Brown meat.Add sauce.Make mac n cheese.Layer in a casserol dish the mac n cheese, sauce mixture and a layer of cheese, repeat. Bake at 350 until bubbly and cheese is melted.

macaroni salad.
1 Lb box of macaroni
1 jar of sandwich spread
1 onion cut up
1 bell pepper cut up
1 cucumber cut up
diced ham
2 tbl spoons of mayo

Make macaroni according to directions.When done drain,add sandwich spread and mayo. Mix well.Add onions, bell peppers, and cucumber and ham cubes. Mix well.Serve warm or chilled.

My mom, who is 85, and I were talking about food that you remember making and/or eating. She recalled one macaroni loaf from the 60s or 70s. It was easy, quick, and cheap to make. It had Campbell's vegetable soup and a cheese sauce over it.

Years ago, my grandfather used to make a dish that he called "Fried Macaroni". All I can remember is that he used macaroni, wheat germ, and sugar. And it was fried, at least at the end of the recipe. Does anyone know of a recipe that sounds like this at all?

You can bake the mac and cheese in a flat pan. When cool, cut into squares, dip each square in beaten egg, then bread crumbs and the deep fry. That is how I do it. Hope that helps. Good luck.
