Reuben Casserole in baking dishI had a pot luck recently and this was a huge hit. It's a casserole using the ingredients of a Reuben Sandwich plus one other. But I made it "user friendly" by mixing all of them together.

I served mine with cornbread and salad. It has protein, dairy, veggies, and if you add some apples or oranges to your salad you have all five food groups.

Prep Time: 15-20 minutes

Cook Time: 45 minutes

Total Time: 60-65 minutes

Yield: 9-12 servings

Source: I made this for my cooking classes but just made it easier for this one.

Ingredients:

  1. In a large bowl, place thawed hash browns. Mix in chopped up corned beef.
  2. ingredients in bowl
     
  3. Add can of drained sauerkraut, swiss cheese and Thousand Island dressing. Add salt and pepper. Mix well.

  5. Spread in ungreased 9" by 13" inch baking pan. I prefer glass, but metal will work.
  6. Bake covered loosely with foil at 400 degrees F for about 30 minutes. Then reduce heat to 350 degrees F, remove foil and bake it another 15 minutes.

NOTE: I found that the spuds were not as done as I like them so you can do it like above or you can pre-bake them for about 10 minutes and mix the other ingredients together and add to the top of the spuds. Do not attempt to take the hot potatoes out and mix them together. That would be too much work.

Thanks for the turkey recipe - I will try that when my oldest son visits later in May. Neat - it is always nice to be recognized - even if it's for doing something we love to do! I like Rachel Ray also - down-home style..
