Stuffed Pasta ShellsStuffed pasta shells are a warm, hearty meal great for the winter.

Ingredients:

Stuffed Pasta Shells
 

*Emeril's Baby Bam is a mixture of 3 Tbsp. paprika, 2 Tbsp. salt, 2 Tbsp. parsley, 2 tsp. onion powder, 2 tsp. garlic powder, 1 tsp. pepper, 1 tsp. oregano, 1 tsp. basil, 1 tsp. thyme, and 1/2 tsp. celery salt.

Steps:

  1. Preheat oven to 350 degrees F (oven rack should be in center position)

  3. Boil a large pot of water. Add 2 tsp. salt and pasta shells. Cook until the shells are al dente (about 10-12 minutes), stirring occasionally to prevent the shells from sticking together. Drain shells and rinse under cold water, shake gently and spread in a casserole dish that has been greased using 2 tsp. olive oil.

  5. Heat 2 Tbsp. olive oil in a skillet over medium heat. Add onions and garlic and cook, stirring, until soft (about 7 minutes). Add squeezed spinach and cook, stirring, for 3 minutes more.

  7. In a large bowl, stir together ricotta cheese, eggs, Parmesean cheese, and 2 cups of mozzarella cheese. Add spinach mixture , extra-virgin olive oil, baby bam, the remaining salt, basil oregano and pepper. Stir to combine thoroughly.

  9. Spoon about 2 Tbsp. of the spinach-ricotta filling into each cooked pasta shell and return to the casserole dish.

  11. Pour spaghetti sauce over the top of the filled shells and top with the remaining mozzarella cheese.

  13. Bake, uncovered, until bubbly, about 20 minutes. Let rest about 5 minutes before serving, then enjoy!
