I buy 5 lb. bags of shredded mozzarella cheese because my family makes pizza on a regular basis. However, once the bag is opened, it tends to begin to mold fairly quickly. Has anyone used a variation of this vinegar method with shredded cheese? If this doesn't work, does anyone have a suggestion?

Once the bag of cheese is open be sure no one sticks fingers in to get out a handful. I instruct the family to use a long handled iced tea spoon. This has helped immensely. I'm going to add the vinegar dampened paper towel too now.
I agree about the fingers. I noted years ago that if I touched a piece of cheese while cutting it or shredding it; the area I touched would be moldy in a couple days. I now hold the cheese with a piece of cling wrap/wax paper and find it keeps longer in the fridge.
I put it in quart freezer bags and keep in freezer.
When I need some for whatever I just take out what I need and it doesn't mold or stick together. I do this with all my shredded cheeses. Been doing this for years, I was cook for 35 yrs and also did it in my restaurants.
Freeze it, I do it all the time.
Did you know these preshredded cheeses are coated with chemicals so the shredded do not stick together. Saw this on how it is makes. Try shredding your own and see how the shredded stick together. Just saying. Enjoy or not.
Large bags of shredded chees can be frozen and will stay for months.
when i have too much shredded cheese left over, i bag it it smaller portions and freeze it , when i'm ready to use it again, it sprinkles nicely on pizza
I keep all hard cheese in the freezer, shredded cheese lasts months longer. I once received a 20 lb. block of white cheddar and after giving away at least half of it, I hacked the rest into smaller blocks and it kept in the freezer for over a year. Hope this helps!
One thing, make sure your refrigerator is cold enough. Most people don't keep cold enough. Temperature should be 37-40 deg. Cool heated foods before storing, and room temp foods could be wrapped and put on ice for a short time before storing.
Shredded chease will keep in the freezer and you can use it with out defrosting it on your pizzas.
I buy 5 pound bags of shredded cheese. I divide the bag into 5 bags. I freeze 4 and keep 1 in refrigerator.
I wrap my cheese in saran wrap and then tinfoil. Keeps mold away no sign of it after weeks I just change tinfoil when it becomes torn after awhile.
Yes i do freeze the left over it is a good way to keep it with no mold i am happy doing this try it and good luck
I keep mine in the freezer. Its just as easy to use just break off some.
