Ingredients:
- 5 medium zucchini (4 cups)
- 3/4 cup seasoned croutons
- 3 medium carrots, shredded
- 3/4 cup cooked sweet corn
- 1 can Spam, chopped into pieces
- 1 can cream of chicken soup
- 1 cup sour cream
- 2 Tbsp olive oil
- 1 Tbsp butter
- pepper, to taste
Steps:
- Boil peeled, chopped zucchini in salted water for 3 minutes. Drain.
- Saute carrots, onion, and Spam in olive oil and butter until tender.
- Add drained zucchini, corn, soup, sour cream, and pepper stirring gently.
- Pour into casserole and bake for 30 min. at 350 degrees F.
