Australian Honey Joys in paper linersThese sweet treats couldn't be easier to make. I've heard them be called the Australian version of the American Rice Krispie Treat. Where Americans use crisped rice and marshmallows, Australians use cornflakes and honey. Each little pot of deliciousness is made of cornflakes, honey, sugar, and butter, but somehow taste way more elegant. When I bite into one of these, I can instantly taste something like a super crisp Palmier cookie, which I have never made, and am sure is much harder to make than these. Please give them a try as I am sure you will love these!

I find it important to use a honey that you really like. This one I used is my favourite go-to honey from Spokane. I've tried this with cheaper honeys that I think are okay. They were still good, but not the best. Since you're using so few ingredients, you really want them to shine.

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes plus cooling time

Yield: 24 joys

Ingredients:

  • 6 Tbsp butter
  • 1/4 cup granulated sugar
  • 2 Tbsp honey
  • 4 cups cornflakes
  • flaked sea salt (optional)

Steps:

  1. Preheat oven to 300 F. In a large microwaveable bowl, melt butter, sugar and honey together on high for 1 minute increments until bubbly and sugar has melted completely. You can also do this in a big saucepan on the stove and cook the mixture until it's light and frothy.

  3. Stir the cornflakes into this mixture.

  5. Spoon mounds of the mixture into mini muffin tins lined with cupcake liners, working on the quick side.

  7. Bake in oven for about 10 minutes, until lightly golden.

  9. Place tins on cooling rack, then top the honey joys off with a dash of flaked sea salt, if desired. Allow to cool completely before enjoying.

Just in time for cookie exchange parties. Spoon 1 inch apart onto ungreased cookie sheet, lined with parchment paper. Bake at 350 degrees F for 9-10 minutes only. Cool for 1 minute, remove to cooling rack leaving on parchment paper.

I use this cereal in my recipe for rice krispie bars. My kids actually like it better! Of course we put lots of sprinkles on top to make them even more appealing!

Breakfast Cookies
1-3/4 cups flour
1 teaspoon baking powder
1- 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup ( 2 sticks ) butter,room temperture

1 cup packed brown sugar
1 cup grandulated sugar
2 eggs
1 - 1/2 teaspoon vanilla
1 cup quick oats ( not instant ) (I used old fashioned)
2 cups coarsely crushed corn flakes
( Eve used Bran flakes, I used Total )Special K is OK too.
1/2 cup flaked coconut

(Other Add- In OPTIONS, but don't use all of these in one batch,just your taste )

1/2 cup peanut butteror 1/2 cup chopped nuts,
1/2 cup raisins, 1/2 teaspoon cinnamon, cloves or allspice,
1/2 cup applesauce , canned pumpkin or cooked and mashed Zucchini )

Preheat oven to 350* Lightly grease some baking sheets.
In a large bowl sift together flour, baking soda,baking powder and salt.
In another large bowl, beat butter,brown and white sugar with an electric mixer until light and fluffy.
Add eggs; beat well. Add vanilla; beat to combine. Gradually stir flour mixture into the butter - sugar mixture. Beat well. With spoon sir in oats,corn flakes and cocnut. Drop dough by teaspoonsful about 2 inches apart on prepared baking sheets. Bake 1 sheet at a time until cookies are lightly browned, about 8-10 minutes. Remove to rack, let cool. Yeild about 5 DZ. cookies.

They make the best scotcharoos. Use Special K cereal instead of using rice krispies. They are much softer. If you need the recipe for scotcharoos here it is with the Special K cereal in place of the rice krispies.

1 C kero syrup (light)
1 C sugar
1 C peanut butter

Put these three ingredients in sauce pan on stove top and melt on low to medium heat until smooth.

Add 5 cups Special K cereal. Mix into melted mix.
It will be a little stiff to mix.

Spread into 9 x 13 pan.

Melt 1 C butterscotch, 1 C chocolate chips along with 1 T peanut butter in microwave-safe bowl. Do not over melt as the chips will become hard.

Spread melted chips on top of scotcharoos in pan and let cool completely.

My mom used Special K in a drop cookie recipe.

1 cup sugar
1 cup light corn syrup
3/4 cup peanut butter
1 tsp. vanilla
2 cups Special K

Put sugar and syrup in a large microwavable bowl. Microwave on high until mixture comes to a boil. Add peanut butter and stir. Stir in vanilla. Stir in the cereal. Drop by spoonsfuls on waxed paper.

Notes: These don't keep real well - both because they are yummy and because the cereal gets soggy. And I don't like the taste of Special K so I use Rice Krispies in this recipe.

K-Bars!
1C sugar, 1C karo syrup, boil then add 1C peanut butter. Add 6C special K and stir. Put on buttered cookie sheet.
Melt 2 cups chocolate chips and 1 cup peanut butter chips. Spread and chill.
