Potato and Hot Dog CasseroleReady in 50 minutes. Heat oven to 400 degrees F. Slice potatoes thin, like a homemade scallop potato dish. Slice hot dogs. Chop broccoli.
Escalloped CornCombine corn, eggs, salt, onion, cracker crumbs and milk. Pour into well buttered casserole dish. Dot with butter. Arrange triangles of cheese on top as desired.

Chicken and Rice CasseroleSaute' together first 3 ingredients. In an ungreased casserole, combine the last 5 ingredients. Add the sauteed veggies to the last 5 ingredients and mix.
Pear-Lime SaladDrain juice from canned pears and add enough water to make 2 cups liquid. Heat liquid and dissolve gelatin in it. Stir in cream cheese. Mash pears and add to liquid; add lemon juice.
Grilled Sweet Potato SaladFor dressing, in a small bowl, whisk the first seven ingredients; shake well and set aside.
