Irish Soda Bread Recipes

Ingredients:

  • 5 cups sifted all-purpose unbleached flour
  • 3/4 cup sugar
  • 1 1/2 tsp salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/4 lb butter
  • 1 cup raisins, soaked for 15-20 minutes in warm water and drained
  • 3 Tbsp caraway seeds
  • 2 1/2 cup buttermilk
  • 1 egg, slightly beaten

Steps:

  1. Preheat the oven to 350 F and grease and flour two 9x5-inch bread pans.

  5. Cut the butter into chunks. Mix in with a pastry cutter until it is crumbly and you can not see any bits of butter.

  7. Mix in the raisins and caraway seeds.

  9. Whisk the egg in a small dish. Make a well in the dry ingredients and pour most of the buttermilk in, reserving a little to mix with the egg.

  11. Add the egg mixture in and stir everything until the liquid is fully incorporated. The dough will be thick, sticky, and should look a little chunky.

  13. Divide it evenly into the two pans.

  15. Bake the bread 1 hour in the oven preheated to 350 F. Look for a golden color and test with a toothpick for doneness. Cool in the pans for about five minutes and then transfer the bread to a wire rack to finish cooling.

Soda Bread

3 tbsp butter, softened
2 1/2 cups all-purpose flour
2 tbsp sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3/4 cup buttermilk
Honey and room temperature butter for spreading


Preheat oven to 375 degrees.
Grease cookie sheet.
Cut butter in to flour, sugar, baking soda, baking powder and salt in large bowl until mixture is fine and crumbly.
Stir in buttermilk.
Place dough onto lightly floured surface and knead until smooth, about 1 to 2 minutes.

Shape into round loaf.
Place on cookie sheet and cut an X about 1/2 inch deep on top of loaf.
Bake until golden brown, about 35 to 45 minutes.
Serve with butter and honey.

Hi the best recipe for soda bread I have & 1 I always use is. 1lb wholemeal flour. tsp. salt 1 tsp. bicarb. 1 tsp. baking powder mix together then rub in 2 oz butter (this is for moisture as soda bread can be dry) then add enough buttermilk or ordinary milk to form a softish dough. Just kneed this slightly shape into a circle then bake for about 35 minutes. Let us know which works for you good luck. helen x
