Fluffy French Toast

This recipe produces a slightly crispy French toast with a little bit of puff to it.

Ingredients:

  • 3 beaten eggs
  • 3/4 cup flour
  • 1 tsp. baking powder
  • Advertisement

  • 2 tsp. sugar
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 1/2 cups milk
  • 2 Tbsp. shortening
  • 8 slices thickly sliced bread, cut in half (Challah is great for this)

Directions:

Combine eggs, flour, baking powder, sugar, spices, and salt in a shallow dish. Add 1/2 cup of the milk and blend well. Pour the remaining milk in a second dish.

Melt the shortening in a heavy skillet. Dip the bread, one piece at a time, in the plain milk, then in the batter. Turn to coat both sides.

Fry on medium to med-high on one side until golden brown. Turn. Cover the skillet so the batter will puff and cook until the second side is golden. Serve immediately.
