Yam Souffle'

Ingredients:

  • 3 eggs
  • 4 Tbsp. brown sugar
  • 1 tsp. grated orange peel
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 3 lbs. yams, cooked, drained and mashed
  • Advertisement

  • 2/3 cup milk
  • 2/3 cup pecans
  • 6 Tbsp. melted butter

Directions:

Beat eggs, brown sugar, orange peel, salt and nutmeg. Add yams, milk, pecans and butter. Pour into a slightly oiled casserole dish and bake 50 minutes at 350 degrees F. Top with pecans or marshmallows, if desired, for the last 15 minutes or baking.

Does this use actual yams, or sweet potatoes, which are sometimes called yams? I ask, because there is a difference, and it sounds good enough that I'd like to try it.

Instead of pecans and marshmallows, try bread crumbs and partially cooked bacon strips on top - to die for.
