Breakfast Pizza

Gold Post Medal for All Time! 846 Posts

Be honest, how many of us have eaten leftover pizza for breakfast? I know I have! Well, here's an easy pizza that's topped with breakfast ingredients. If you're a cheese lover like me then feel free to 'double cheese'.

Ingredients:

  • 1 can refrigerated crescent rolls
  • 1 cup cheddar cheese and/or mozzarella cheese, shredded
  • 1/2 cup green bell peppers, diced
  • 8 cherry tomatoes, halved
  • 2 eggs, scrambled
  • 4 breakfast sausage links or 4 slices of bacon, cooked, drained and sliced

Directions:

Preheat oven to 400 degrees F. Evenly press crescent dough in to a 12 or 14 inch round pizza baking sheet. Evenly sprinkle 1/2 cup cheese, the green peppers and the tomato halves onto the dough, leaving a slight border around edge. Gently press these ingredients in to the dough.

Bake in oven for 10 minutes. While the crust is baking, cook the scrambled eggs and cook and slice the sausage or bacon. Remove baking sheet from oven.

Spread eggs, sausage or bacon and remaining 1/2 cup cheese evenly across pizza. Return to oven and bake for another 3 minutes or until cheese is melted and edge of crust is golden brown.

Remove from oven. Let rest 5 minutes. Slice and serve.
